I’m so excited to get this post series back in the mix. Remember? I test out recipes that you see in all the fancy, trending cook books and magazines and report back to you if the recipes are a) realistic and b) delish. I couldn’t be more ecstatic to share this cook who you HAVE to copy. This fellow hockey wife (to be) does it all so she knows the importance of time, convenience, ease, and yet always errs on the side of tasty.
Normally, I post specifically about one item in a cookbook or a lone recipe in a magazine but I was put in between a rock and a hard place on this one. I couldn’t choose. I spent the week experimenting with the recipes in the cookbook, Brownie Pan Every Damn Day by Lauren Rodych {soon to be Eberle). I was thoroughly impressed. Not only are these recipes delicious and so easy even a husband can do it, but you also get a new accessory! Honestly, who doesn’t love a new accessory…even in the kitchen? Get the damn brownie pan {here}.
Here is the spoiler alert, it was all so good. So easy. My toddler loved the personalized portions, helping to make some recipes and in end, I was easily storing the leftovers in the freezer for future use, AS I need them. Um, yes please.
So should I share the quick and easy omelettes, the zucchini lasagnas, turkey sliders, or the quinoa mac and cheese bites? How about a little round up of each, eh? I’ll share the recipe that I use most often and is integral in my weekly meal planning. It’s so simple and so essential. It is especially helpful when I’m trying to make healthier choices in the kitchen.
On a weekly basis, this is my go-to. If you follow along with my blog on the regular or my Instagram, you will know I’m not much of a breakfast girl. I’ve got a case of the gaggies, so I’ve got to let my reflexes wake up a bit and by the time I’m ready for some grub, there is no time to whip something up with school bells and scheduled naps to tend to…But now that I can make these bites by the dozen, they are literally a fan favourite in the house for breaky, snack, lunch. You’ll see these if I ever host a brunch.
Ladies and Gentlemen…The Make Ahead Omelette.
Of course, add ingredients to cater to your preferred taste but here is a taste of Brownie Pan Every Damn Day.
What you’ll Need:
12 Eggs
1 Cup of Egg Whites
Fillings (Optional)
Kale
Mushrooms
Red Peppers
Garlic
Step By Step (Ooh Baby!)
1) Preheat oven to bake at 325 degrees Fahrenheit
2) Grease the damn brownie pan squares with butter or olive oil
3) Crack one egg into each square. Use the back of spatula to slightly crack the yolk.

4) Add egg whites to each square evenly.
5) Top with fillings of your choice
6) Bake at 325 degrees Fahrenheit for 20-22 minutes.
Oh…Hard (not) boiled eggs too. |
7) Remove pan from oven, and remove omelettes from squares within 5 minutes to prevent overcooking.
I put that $%!+ on everything. |
TIP: Prep and reheat in the microwave for 35-45 seconds for a quick breakfasts.
